Valentine’s Day Hidden Kisses Inspired by Emeril Lagasse's Forgotten Kisses Long before the words “gluten free” became part of everyone’s vocabulary, I made these cookies and fell in love. The ingredient list can be counted on one hand and they take minutes to whip up. There is one little catch they need to “cook” for two hours. The wait can seem excruciating but isn’t true love worth the wait?

In this recipe the ingredients are:

2 large egg whites, at room temperature

1/2 teaspoon cream of tartar 1/2 cup of sugar

 1 teaspoon vanilla extract

1 cup semisweet chocolate chips

You will need:

2 baking sheets lined with parchment

1 mixing bowl

 1 measuring cup

 1 set measuring spoons

Pre Heat oven to 350 In the bowl of an electric mixer, beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.)Add the sugar gradually, about 3 tablespoons at a time. Beat until egg whites are shiny and somewhat stiff. Next, add the cup of semi-sweet chocolate chips Gently fold in the chocolate chips Working one teaspoon at a time, push a teaspoonful of meringue from the tip of 1 teaspoon with the back of another teaspoon onto the lined baking sheets, leaving 1-inch of space between cookies Place baking sheets in the preheated oven and turn the oven off. ( (This is great because it is almost impossible to burn them !)Leave the cookies (undisturbed) in the oven for at least 2 hours and up to overnight, or until cookies are crisp and dry. Remove and share with someone you love.
