Hold The Gluten

Last week I signed up to listen to an 8 day telesummit on Gluten.   The host, Dr.Tom O’Bryan, traveled to the UK to interview researchers, authors and medical doctors who have become aware of the serious health consequences of eating gluten.

While gluten allergies have become common, I was surprised to learn that gluten has been linked to heart disease, Multiple Sclerosis, Alzheimer’s, all autoimmune disorders and a host of digestive and intestinal maladies.  The list of critical health problems seemed unrelenting as I listened to interviews with more than 20 experts.

As I counsel patients about gluten the obvious problem that we encounter is the prevalence of gluten in our diets and food choices.   In fact, it takes a fair amount of thought, planning and internal dialogue to avoid gluten.

Unless a food choice specifically claims to be gluten-free all of these common foods must be avoided:  bread, cake, all bakery items, pasta, beer, rye whiskey, and anything with flour including tortillas, cookies, pita and the list goes on.  Symptoms are almost as extensive as the list of foods and, besides digestive, respiratory and cardio-vascular ailments, depression, fatigue and a higher incidence of colds and flu are also the result of eating gluten.
