Just a Little Green from Noodle Soup Children

When my children were small they divided vegetables into two categories. 
Good and tasty like carrots and potatoes and yucky like broccoli and cauliflower.
The trick was to somehow transfer the "yucky" vegetables to the tasty side. One method that was successful was to replace something not so healthy with something nutritious.This bate and switch worked well when replacing bread crumbs with broccoli. My children loved pasta topped with toasted bread crumbs but when I replaced it with "broccoli" crumbs they loved it just as much. I simply disguised the broccoli to look like bread crumbs and soon they became part of the "tasty" team.
Broccoli in disguiseOne stalk of fresh broccoli sliced lengthwise into "steaks"Brush with olive oil , pinch of salt and 1 clove  diced garlic ( garlic is optional)Place broccoli on parchment lined baking sheet and place in oven at 425 for 4 to 5 minutesRemove from oven, let broccoli cool slightly and then chop into tiny pieces, sprinkle withparmesan cheese and return to oven and broil 1 to 2 minutes, or until the cheese turns golden brown.Sprinkle broccoli/ cheese mixture on top of pasta or serve as a side dish. You will soon have broccoli converts in your home.
